Caliper Overhaul

What do you use when overhauling a caliper assembly on the rubber seals? Brake fluid or special formulated brake hydraulic assembly lube?

There is no special assembly lube needed (just use brake fluid), especially if you are rebuilding the part and it is going to be put on the vehicle fairly soon after. If this part is going to sit for a long period of time, then you may want to look for some brake assembly lube.
